This sweet combo has been the perfect end to a crazy/hectic/stressful week. I took an (unexpected) week-long break from my blog. Since I started Anna-Nicole Bakes, I’ve aimed to post a new recipe once every week. I’ve never missed my target. . .except for this week.
The crazy part? I had a next recipe ready to post. I spent the entire week perfecting a very time-consuming dessert. I even did an entire photo-shoot with the finished product. But then I was editing my pictures on Lightroom and something just didn’t click. The photos were okay. And you know what? Someone else may have thought the photos were great. But I didn’t.
I was confident in the recipe, but I wasn’t confident in the pictures. I had some shots that were decent, but the photos just felt like they were missing something. Even though I have my “one recipe per week” target, I don’t ever want to post anything that’s less than perfect.
With a packed school-week—which included being on-call, having a paper due, and having a presentation—I didn’t have time to redo the photo-shoot. So I took a week off. It was unexpected, but also unexpectedly a good thing.
Creators aren’t robots. No matter how hard we try to be. Breaks are essential to allow us to refuel and come up with new ideas. In a world where the mantra is pretty much work work work, sometimes we forget that work can only happen when we’re at our best. Aka happy, well-rested, and well fed. If we’ve run out of juice, then we’re not under ideal conditions to perform. So for everyone feeling tired, worn down, or stressed—don’t forget to take a break. It can be an hour, a day, or even an entire weekend. Let me be the person to say: take a break.
I feel re-energized. I’m back and I’m excited to continue posting the sweetest treats.
A warm, ooey gooey, chocolate-y cookie skillet? Can I just say: YUM.
Chocolate Chip Cookie Skillet
Ingredients
- 1 1/2 sticks unsalted butter
- 3/4 cup brown sugar (packed)
- 3/4 cup granulated sugar
- 1 large egg + 1 yolk
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 tsp baking soda
- 3/4 tsp salt
- 2 cups chocolate chips
Instructions
- Preheat the oven to 325 degrees Fahrenheit. Grease a 12-inch cast iron skillet.
- In a large bowl, *just barely* melt the butter in the microwave.
- Add the brown and granulated sugars to the bowl with the barely-melted butter. Stir.
- Add in the egg, egg yolk, and vanilla extract. Stir.
- Gradually incorporate the flour, baking soda, and salt. Mix until just combined.
- Fold in the chocolate chips.
- Transfer the cookie dough into the cast iron skillet.
- Bake for 30-35 minutes in the preheated oven. Let cool for 10 minutes before serving. Top with chocolate sauce and vanilla ice cream. Enjoy!
