Easy and Delicious Blueberry Cobbler

I don’t know about you all, but I am hella excited for this three-day weekend (even though I’m spending it doing law school work). Because of the pandemic, this semester is much more compressed than it was my first year of law school. I think my last day of classes is right at the beginning of November actually! It’s crazy to think that there’s only about two more months (!!!) of school left. That being said, this weekend is really the only “vacation” I get this semester because of the compressed format. So I’m not taking this weekend for granted, and I’m enjoying every single minute of it.
If anyone’s still looking for the PERFECT Labor Day dessert then I’ve got you covered with this Easy and Delicious Blueberry Cobbler. Heck, it’s honestly the perfect dessert for any occasion.
What is Cobbler?
Per The Oxford Companion to Food, a cobbler is a deep-dish pie dating back to the 1850s. It’s made with cooked fruit and a thick, biscuit-like or cake-like or even pie crust. The dough puffs up to look like a cobblestone street (hence the name). Cobbler pairs exceptionally well with a nice scoop of ice cream or a cold glass of milk.
The great thing about cobbler is that it’s so versatile. The fruit filling can be anything from peaches to berries to nectarines to apricots. It’s a rustic dessert where you can just cobble together whatever you already have stocked in your kitchen. Given that blueberries are one of my favorite fruits + it’s Labor Day weekend (so break out that the patriotic color scheme), my choice of filling was easy. But again, you can swap out ingredients as you desire to accommodate your own personal tastes.
How to Make Cobbler
Melt the butter. First things first, preheat the oven to 375 degrees Fahrenheit. Then throw a stick of unsalted butter into a 7x11” baking pan. Place the pan into the preheated oven until the butter melts completely. Once melted, remove the pan from the oven and set aside.
Create the filling. In a medium or large bowl, combine 3 cups of blueberries, 1 teaspoon of lemon zest, and 1/3 cup of granulated sugar. Note that the blueberries can be fresh or frozen (if you go the frozen route, you don’t have to thaw the blueberries first). After combining everything, simply pour the blueberry mixture over the melted butter in the pan. Use a silicone spatula to evenly distribute the filling over the surface of the pan. Set aside.
Make the topping. This cobbler topping requires just a few simple pantry ingredients. In a medium or large bowl, toss together 1 cup of all-purpose flour, 1 ¼ cup of granulated sugar, 1 teaspoon of baking powder, ½ teaspoon of salt, 1 teaspoon of vanilla extract, and ¾ cup of whole milk. Stir until just combined.
Bake. Spoon the batter on top of the blueberries. Sprinkle 2 tablespoons of sugar on top of the batter. Bake in the preheated oven for 50-55 minutes or until the top is golden brown and the blueberries are bubbling. Let cool for 20 minutes and then serve with a scoop of ice cream.
Not only is this blueberry cobbler SUPER EASY to whip up, it also can be made with frozen blueberries so this dessert can be enjoyed year-round. The ooey-gooey blueberry filling complements a sweet, crunchy topping sprinkled with sugar. It’s out-of-this-world delicious.

Ingredients:
- 1 cup all-purpose flour
- 1 ¼ cup granulated sugar + 2 tbsp of sugar to sprinkle on top
- 1 teaspoon baking powder
- ½ tsp salt
- ½ tsp vanilla extract
- ¾ cup whole milk
- ½ cup of unsalted butter
- 3 cups blueberries (fresh or frozen)
- 1/3 cup granulated sugar
- 1 tsp lemon zest
Instructions:
- Preheat the oven to 375 degrees Fahrenheit.
- Melt the butter in 7x11” pan. Once the butter has melted, remove the pan from the oven and set aside.
- In a medium or large bowl, combine the blueberries, sugar, and lemon zest. Pour the blueberry mixture over the melted butter.
- In a separate bowl, add the flour, sugar, baking powder, salt, vanilla, and milk. Mix until just combined. Spread the batter over the blueberries. Sprinkle the top with 2 tablespoons of sugar.
- Bake on the middle rack of the preheated oven for 50-55 minutes or until the top is golden brown and the blueberries are bubbling.
- Allow the cobbler to cool 20 minutes before serving. Add a scoop of vanilla ice cream and enjoy!
